冰酒是從已經在寒冷的加拿大冬天中被大自然挑選出來的雪中珍珠, 自然冰凍的葡萄中, 釀造出一種罕見的甜酒。

在北緯43度，尼亞加拉半島的緯度範圍與法國南部，西班牙的里奧哈，義大利最經典基安蒂等舉世聞名的葡萄酒產區相同緯度。尼亞加拉半島是在世界上唯一的葡萄酒產區, 有著特殊的氣候, 夏天在酷暑氣候中能種植出品質優越的釀酒葡萄, 同時也能在凜洌冬天氣候下釀造出冰酒,（這樣的寒冷氣候也沒有阻止藤蔓的生存）

我們確保在氣溫低於-10℃以下在半夜採收(這樣的標準比VQA 的-8℃更為嚴格)。一旦採摘，葡萄在結凍的狀態下立即壓榨，同時還凍結。每個冷凍葡萄產量只是強烈的冰凍果汁一滴。 

正宗冰酒是從其他甜酒非常不同; 之前在十二月下旬採摘，葡萄凍結和解凍的狀態，重複8至10次。也因為這樣每次他們凍結時間，新的和更複雜的口味被釋放到從葡萄果汁。偉大冰酒的簽名是甜度和酸度之間的平衡緊張。
